Description
Basic tomato sauce for pasta
Ingredients
| 1⁄4 | c | Olive Oil |
| 5 | clv | Garlic (Chopped) |
| 28 | oz | Tomato Puree |
| 6 | oz | Tomato Paste |
| 28 | oz | Whole Peeled Tomato |
| 2 | t | Basil |
| 1 | T | Onion Powder |
| 2 | t | Oregeno |
| 1 | t | Pepper |
| 1 | t | Kosher Salt |
| 3 | Bay Leaves |
Instructions
Add oil to stockpot and sauté garlic in medium heat until translucent. Add tomato puree and tomato paste to stockpot. Drain water from can of peeled tomato. Using a food processor roughly chop the tomatoes and add to sauce mix. Stir until tomato base is fully combined. Add all spices. Simmer for a minimum of half-hour, stirring occasionally. Taste and add seasonings as desired.
Notes
I usually do not go beyond the amount of seasonings shown as I enjoy a tomatoey taste and do not want to over power with too much seasonings.
When purchasing cans of sauces and whole tomatoes I find the quality from the name brands to be better than the store brand.
If you find your sauce bitter stir in a teaspoon of sugar to cut the bitterness.
