Cuban Style Pork Roast
Serve this with Black Beans & Rice! Yummy!!!
|1||lb||boneless pork roast|
|1⁄3||c||frozen orange juice concentrate (thawed)|
|2||tsp||lime peel (shredded)|
|1⁄3||c||fresh lime juice|
|4||clv||garlic & 2 tbsp. cooking oil (crushed)|
Pierce meat to allow marinade to enter. Place meat in a sealable plastic bag.
Combine all other ingredients. Pour over meat. Seal bag. Refrigerate over night turning as often as possible.
Roast meat at 325 degrees, uncovered, for 2 1/2 to 3 hours, or until internal temperature registers 165 degrees. Baste frequently with the marinade. Remove from oven, cover and let stand 10 minutes.
Cuban style guacamole with pineapple is also a big plus!
