Simple Beef Wellington
Ingredients
| 1 | pk | crescent roll |
| 8 | oz | beef fillets (Cut to 4 oz sizes) |
| 1 | pn | Salt |
| 1 | pn | Pepper |
| 1 | T | Garlic (Crushed) |
| 1⁄2 | lb | mushrooms (button) (Sliced) |
Instructions
Preheat oven to 375 degrees F.
Assemble 4 sets of crescent rolls 2 per set creating a square. Pinch center of crescent to close pastry sections into one.
Heat a large oven safe skillet over high heat, add the oil. With paper towels remove all excess moisture from the outside of the beef, season the beef liberally with salt, pepper and garlic on all sides. When the oil begins to smoke, lay the beef fillets gently in pan, making sure the fillets are not touching. Cook for 1 1/2 minutes on each side, then put the pan in the oven and cook for an additional 10 minutes for medium rare.
Remove from oven and place each cut of beef on top of two of the crescent pastry squares. Add mushrooms to top of the beef fillets. Enclose the beef with the other squares and pinch all sides of pastry. Place Wellington in a parchment covered pan and replace into the oven until the top of the pastry becomes lightly browned. Remove from oven and promptly serve. Enjoy.
